Chicken Mango Peanut Salad

The sweet and heat of coconut peanut dressing works wonders in this refreshing salad.

INGREDIENTS
Dressing:
1/2 cup Andre Prost Coconut Milk (found in the baking section)
3 tablespoons Peanut Sauce Mix
3 tablespoons lime juice
2 tablespoons Garlic Chili Pepper Sauce or hot sauce of choice
Salad:
6 cups mixed greens
2 large mangos, peeled and cubed
3 cups chopped chicken
1/2 cup thinly sliced red onion
1/2 cup rough chopped basil leaves
1/2 cup chopped honey roasted peanuts
DIRECTIONS
Step 1
Whisk Coconut Milk, Peanut Sauce Mix, lime juice and Garlic Chili Pepper Sauce in a medium bowl. Set aside.
Step 2
Add salad greens, mango, chicken, onions, basil and peanuts to a large bowl. Toss with dressing and serve.
TEST KITCHEN TIP:
Refrigerate the remainder of Coconut Milk in a glass or plastic container for up to 10 days. Use in curries, rice or stir-frys.
