Coconut Lime Peanut Marinade

This makes enough marinade for 4 pounds (1800g) of chicken, pork or shrimp. For maximum flavor, marinate the meat in the morning and grill or bake that night.
TIME
10 minutes
YIELD
2 3/4 Cups marinade
INGREDIENTS
1 tablespoon finely minced ginger
1-3.5 oz box Peanut Sauce Mix, both inner envelopes
1-13.5 oz can Andre Prost Coconut Milk (found in the baking section)
1/4 cup fresh squeezed lime juice
1 grated rind of one lime
1/4 cup brown sugar
1 cup sweetened coconut flakes
4 large cloves garlic, finely minced
DIRECTIONS
Step 1
In a bowl, whisk all ingredients together until well mixed.
Step 2
Pour over chicken, pork or shrimp, turning to coat on all sides. Marinate 2 hours or more.
Step 3
Grill or bake.
Step 4
Boil any unused marinade for 5 minutes or more. Serve on the side for a dipping sauce.
