Coconut Magic Bars

These delicious bars have a coconut theme! They’re great for a crowd! “Bet you can’t eat just one!”  We made a sweetened condensed coconut milk just for this recipe.

INGREDIENTS
1 1/2 cups vanilla wafer crumbs (about 45 cookies)
6 tablespoons butter or margarine
1 1/2 cups sweetened flaked coconut, divided
1 see recipe for sweetened condensed coconut milk using Andre Prost Coconut Milk (found in the baking section)
1-12 oz package semi-sweet chocolate chips
2 cups mini marshmallows
1 cup chopped walnuts*
*For a sweet and salty treat, substitute salted Spanish nuts for walnuts
DIRECTIONS
Step 1
Preheat oven to 350°F. Grease or spray a 9 X 13 inch baking pan.
Step 2
Melt butter in a medium saucepan. Add cookie crumbs and 1/2 cup of coconut flakes. Mix well and spread into prepared pan. Using the bottom of a measuring cup, press crumb mixture evenly and firmly into bottom of pan. Bake 10 minutes and remove from oven.
Step 3
Immediately spread sweetened condensed coconut milk over crust. Sprinkle with remaining 1 cup coconut flakes, chocolate chips, marshmallows and walnuts.
Step 4
Bake 25 minutes or until lightly browned. Cool on wire rack, then refrigerate.
TEST KITCHEN TIP:
For uniform bars, cut cold bars with hot knife, which has been dipped in hot water and wiped off.
