Coconut Muesli

This delicious, nutritious Swiss breakfast keeps you going for hours!  Lite Coconut Milk cuts down on calories but our full fat Coconut Milk is just as delightful! Feeds a family for days, so just grab and go!

YIELD
9 cups or 18-1/2 cup serving
INGREDIENTS
2 Granny Smith apples, washed and grated
1/2 large lemon, juiced
2-13.5 oz cans Andre Prost Lite Coconut Milk (found in the baking section)
2 cups low fat Greek yogurt
2 cups muesli (store bought or homemade)
1/2 cup shredded sweetened coconut flakes
1/2 cup golden raisins
1 teaspoon ground cinnamon
1/2 cup honey or maple syrup
1/4 teaspoon salt
Sugar
Optional: Seasonal fruits, walnuts or almonds
DIRECTIONS
Step 1
Add apples and lemon juice to large bowl. Mix well so apples are covered with lemon juice, this prevents browning. Add Lite Coconut Milk, yogurt, muesli, coconut flakes, raisins, cinnamon, sweetener of choice and salt. Stir until combined. Adjust flavor with 2-3 tablespoons of sugar, if more sweetness is desired.
Step 2
Cover and refrigerate overnight.* Serve with seasonal fruit and extra walnuts or almonds. Keeps for 5 days.
TEST KITCHEN TIP
*This can be eaten immediately but the best flavor and softer texture comes out by letting it sit overnight.  Enjoy it all week long.
