Coconut Slow Cooked Cereal

The combination of Andre Prost Coconut milk, shredded coconut and grains makes this dairy-free cereal a long lasting, nutritious breakfast.
TIME

10 minutes to assemble
2 hours to cook on high, or
3 hours to cook on low

YIELD
Serves 8
INGREDIENTS
1-13.5 oz can Coconut Milk (found in the baking section)
1 cup steel cut oats (not instant)
1 cup 5-grain cereal (not instant)
1/2 cup shredded coconut (sweetened or not)
1 large apple, peeled, cored and diced
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
Garnishes: chopped nuts, toasted flaked coconut, diced apples or maple syrup.
DIRECTIONS
Step 1
Lightly oil the inside insert of 6 quart slow cooker.
Step 2
Add Coconut Milk, oats, cereal, shredded coconut, diced apple, cinnamon, salt and 3 cups water. Mix well and cover. Cook on high or low.
Step 3
Serve with garnishes of choice.
*TEST KITCHEN TIP:
Assemble cereal while cleaning up dinner dishes, and cook until bed time.  Store in the refrigerator and have a nutritious breakfast all ready for the morning rush … all week long!
