Coconut Tapioca Pudding

Andre Prost Coconut Milk gives tapioca pudding an added dimension of flavor! It makes a perfect treat for those who can’t have milk.

YIELD
7 - 1/2 cup servings
INGREDIENTS
2-13.5 oz cans Andre Prost Coconut Milk (found in the baking section)
1/2 cup sugar
1/2 cup sweetened flaked coconut
1/4 cup quick cooking tapioca
1 egg
1/2 teaspoon pure vanilla extract
1/2 teaspoon coconut extract
Optional: sliced fruit
DIRECTIONS
Step 1
In a heavy bottomed saucepan, combine 1 can and 1 cup* Coconut Milk, sugar, flaked coconut, tapioca and egg. Beat well and let sit for 5 minutes.
Step 2
Whisking constantly, cook mixture over medium heat bringing to a full boil. Remove from heat. Stir in vanilla and coconut extracts. Cover and cool for 20 minutes.
Step 3
Serve warm, with fruit of choice or refrigerate and serve cold.

*Refrigerate remaining coconut milk in a glass or plastic container. Use in smoothies or sauces.
