Creamy Cucumber Avocado Dip

This delightful dip combines two super foods, coconut and avocado.  Lots of lemon and cucumber make for a delectable dip!
TIME
5-10 minutes to assemble
YIELD
2 1/2 cups
INGREDIENTS
2 ripe avocadoes (ripe but not mushy), roughly chopped
1/2 English cucumber, roughly chopped
1/2 cup Andre Prost Coconut Milk (found in the baking aisle)
1/3 cup fresh lemon juice
3 tablespoons chopped cilantro
1 tablespoon diced shallots
1-1 1/2 teaspoons salt
2 cloves garlic, minced
DIRECTIONS
Step 1
Add avocadoes, cucumber, Coconut Milk, lemon juice, cilantro, shallots, salt and garlic to a blender or food processor. Blend or process until a thick purée with bits of small chunks in it.
Step 2
Cover and refrigerate. Use within two days.
TEST KITCHEN TIP
Store remaining coconut milk in a glass jar and refrigerate.  Use in smoothies, soups, sauces or in cooking oatmeal.
