Fruit Dip

Serve a dollop of this creamy dip on pie or use as a dipping sauce for fruit.
TIME
5 minutes to assemble
YIELD
2 cups or 16 -2 tablespoon servings
INGREDIENTS
1-13.5 oz can chilled* Andre Prost Coconut Milk (found in the baking section)
1 cup cool whip
2 tablespoons confectioners sugar
1/4 teaspoon coconut extract
*Chill can of Coconut Milk (upside down) in refrigerator overnight, so coconut solids and water will separate.
DIRECTIONS
Step 1
Remove can of Coconut Milk from refrigerator and carefully remove top from can (so ingredients stay separated). Pour off coconut milk water and scoop coconut milk solids into a small bowl.
Step 2
Add cool whip, sugar and vanilla extract. Whisk until smooth. Cover and refrigerate, if not using right away.
