Green Tea Ice Cream

Green tea powder (matcha) and Andre Prost Coconut Milk make a sweet and slightly savory ice cream that’s sure to please. It’s ultra-creamy and is the perfect ending to any meal.
TIME
20 minutes to assemble
1 hour to chill
20-30 minutes to churn
YIELD
Serves 4
INGREDIENTS
1 tablespoon green tea powder (matcha)
3 tablespoons hot water
3 large egg yolks
2/3 cup sugar
1-13.5 oz can Andre Prost Coconut Milk, (found in the baking section) divided
1/4 teaspoon almond extract
DIRECTIONS
Step 1
In a small bowl, slowly whisk green tea powder into hot water until dissolved. Set aside.
Step 2
Add egg yolks, sugar and 1/2 can Coconut Milk to a heavy-bottomed, medium-sized saucepan. Whisk until well mixed. Cook over a medium heat, stirring constantly.
Step 3
When mixture is thickened, remove pan from heat. Add reserved green tea, remaining Coconut Milk and almond extract to saucepan. Stir well and pour into a shallow bowl. Cover and refrigerate until chilled.
Step 4
Pour cold Coconut Milk mixture into frozen insert of ice cream maker. Follow instructions for ice cream maker.

TEST KITCHEN TIP:
Make sure insert has chilled in freezer for 24 hours to guarantee it will chill the ice cream properly. Green tea powder can be found in Asian or health food stores.
