Rice Pudding

INGREDIENTS
2 cups cooked Jasmine Rice
1-13.5 oz can Andre Prost Coconut Milk (found in the baking section)
1/2 cup raisins
1/2 cup sugar
1/4 teaspoon salt
1 egg
1/2 teaspoon vanilla extract
Ground nutmeg
DIRECTIONS
Step 1
Add Jasmine Rice, Coconut Milk, raisins, sugar, and salt to a medium saucepan. Bring to a boil and cook over medium heat, stirring until combined. Cook about 3 minutes.
Step 2
Beat egg with one-tablespoon water. Stirring constantly, slowly add in a thin stream to rice mixture. Stirring, cook for 2-3 minutes and add extract. Mix well and pour into dish. Sprinkle with nutmeg. Serve warm or cold.
