Tropical Fruit Smoothie

This recipe would make tasty shooters for a summer’s brunch, with a touch of rum.

4 cups
INGREDIENTS
1-13.5 oz can Andre Prost Coconut Milk (found in the baking section)
1 large ripe banana, chilled
1-8 oz can crushed pineapple in its own juice
1/2 cup confectioner’s sugar
1 1/4 cups ice cubes
Optional: 2-3 drops rum extract
DIRECTIONS
Step 1
Add Coconut Milk, banana (sliced), pineapple, sugar, ice cubes and extract to a blender. Blend on high speed until very smooth. Serve.
NOTE:
This smoothie makes extra delicious ice pops and is a great treat for children with milk allergies.  Use three-ounce paper cups for ice pop containers.  Insert popsicle sticks in center when mixture is almost frozen, or leave without and use like a push-up pop.  Freeze 5 hours to overnight.
