Key Lime Pie

This deliciously tart pie is best prepared well in advance. Allow 5 hours to chill thoroughly and set up firmly.

INGREDIENTS
1 11.6 oz can Andre Prost Sweetened Condensed Coconut Milk
½ cup Nellie & Joe’s Key West Lime Juice
4 extra large eggs
5 tablespoons unsalted butter
1 teaspoon cornstarch
1 graham cracker crust (find in baking aisle)
1 ½ cups whipped cream
DIRECTIONS
Step 1
In a small saucepan combine the Sweetened Condensed Coconut Milk, lime juice and eggs. Mix thoroughly.
Step 2
Add butter and cook over low heat, whisking continuously until the first bubble appears on the surface and the curd is thick enough to hold marks from the whisk, about 6-8 minutes.
Step 3
Pour mixture into the pie shell. Cover with plastic and refrigerate until thoroughly chilled, approximately 5 hours or overnight.
Step 4
Garnish with whipped cream.
