Chicken Mango Peanut Salad
The sweet and heat of coconut peanut dressing works wonders in this refreshing salad.

1. Whisk Coconut Milk, Peanut Sauce Mix, lime juice and Garlic Chili Pepper Sauce in a medium bowl. Set aside.
2. Add salad greens, mango, chicken, onions, basil and peanuts to a large bowl. Toss with dressing and serve.

Refrigerate the remainder of Coconut Milk in a glass or plastic container for up to 10 days. Use in curries, rice or stir-frys.
