Key Lime Pie
This deliciously tart pie is best prepared well in advance. Allow 5 hours to chill thoroughly and set up firmly.

1. In a small saucepan combine the Sweetened Condensed Coconut Milk, lime juice and eggs. Mix thoroughly.
2. Add butter and cook over low heat, whisking continuously until the first bubble appears on the surface and the curd is thick enough to hold marks from the whisk, about 6-8 minutes.
3. Pour mixture into the pie shell. Cover with plastic and refrigerate until thoroughly chilled, approximately 5 hours or overnight.
4. Garnish with whipped cream.
