This deliciously tart pie is best prepared well in advance. Allow 5 hours to chill thoroughly and set up firmly.

- In a small saucepan combine the Sweetened Condensed Coconut Milk, lime juice and eggs. Mix thoroughly.
- Add butter and cook over low heat, whisking continuously until the first bubble appears on the surface and the curd is thick enough to hold marks from the whisk, about 6-8 minutes.
- Pour mixture into the pie shell. Cover with plastic and refrigerate until thoroughly chilled, approximately 5 hours or overnight.
- Garnish with whipped cream.
