Lactose-Free Mac & Cheese

lactose-free macaroni and cheese


  • 1 lb elbow pasta, cooked and drained
  • 1 lb lactose-free cheese, grated
  • 1 can Evaporated Coconut Milk
  • black pepper, to taste
  • 1/4 cup bread crumbs

Nothing better on a cold winter’s day.  We like to use a hard lactose-free cheddar for this recipe.



  • One 9"x13" baking dish


  1. Preheat 375°.
  2. Grease a 9x13" baking dish.
  3. Alternate layers of the cooked pasta and grated cheese, ending with cheese.
  4. Grind black pepper over top.
  5. Pour Evaporated Coconut Milk evenly over top.
  6. Sprinkle on bread crumbs.
  7. Cover with foil, and bake 20 minutes or until bubbly.
  8. Uncover and bake 10 minutes more or until lightly browned.
