Apple Cider Caramels
  • 2 qts apple cider
  • 1 (11.6 oz) can Sweetened Condensed Coconut Milk
  • 1 cup dairy-free butter
  • 1 lb dark brown sugar
  • 1 cup light corn syrup
  • 1 pinch salt
These chewy, apple-infused caramels are the perfect seasonal treat! Easy to make, dairy-free, and great for gifting.
  • Cook time: 1 hour 30 minutes
  • Cool time: 2 hours

  1. Simmer 2 qts of apple cider in a large pot for about 1 hour until it's reduced to 1 cup.
  2. Line a 9×13 inch pan with parchment paper and grease with non-stick spray. Make sure the paper goes up the sides of the pan for easy removal.
  3. Place reduced cider, Sweetened Condensed Coconut Milk, dairy-free butter, dark brown sugar, corn syrup, and salt in a pot with enough room for caramel to bubble up a good bit.
  4. Stir constantly over medium heat until caramel reads 245-250°F on a candy thermometer.
  5. Pour into the prepared pan. Let cool completely to room temperature.
  6. Remove from the pan, remove parchment paper, and cut into 1 inch squares. Wrap individually with parchment paper and store at room temperature.
