Chicken Mango Peanut Salad

Ingredients

  • Dressing:
  • 1/2 cup Andre Prost Coconut Milk (found in the baking section)
  • 3 tablespoons Peanut Sauce Mix
  • 3 tablespoons lime juice
  • 2 tablespoons Garlic Chili Pepper Sauce or hot sauce of choice
  • Salad:
  • 6 cups mixed greens
  • 2 large mangos, peeled and cubed
  • 3 cups chopped chicken
  • 1/2 cup thinly sliced red onion
  • 1/2 cup rough chopped basil leaves
  • 1/2 cup chopped honey roasted peanuts

The sweet and heat of coconut peanut dressing works wonders in this refreshing salad.

Time

  • 25 minutes to assemble

Yield

  • 4 servings

Directions

  1. Whisk Coconut Milk, Peanut Sauce Mix, lime juice and Garlic Chili Pepper Sauce in a medium bowl. Set aside.
  2. Add salad greens, mango, chicken, onions, basil and peanuts to a large bowl. Toss with dressing and serve.
