Chocolate Mousse

  • 8 oz unsweetened chocolate, melted and cooled
  • 1 (11.6 oz) can Sweetened Condensed Coconut Milk
  • 2 cups dairy-free whipping cream, like Country Crock

  1. In a medium bowl, whisk melted chocolate with the Sweetened Condensed Coconut Milk until well combined.
  2. In a separate large bowl, whip the cream to stiff peaks.
  3. Fold ⅓ of the whipped cream into the chocolate mixture with a spatula to thin it out.
  4. Gently fold the chocolate mixture into the rest of the whipped cream with a spatula.
  5. Pipe or spoon into 12 ramekins or cups and enjoy! Keep in the refrigerator if not served immediately.
