Coconut Fruit Popsicles

  • 1 (11.6 oz can) Sweetened Condensed Coconut Milk
  • 1 (13.5 oz can) full-fat coconut milk
  • 1 cup sweetened shredded coconut flakes
  • 1 cup dairy-free heavy cream substitute (e.g., Country Crock, Califia)
  • 1 cup strawberries, sliced
  • 1 mango, depitted, peeled, and cubed
Refreshing, creamy, and sweet with yummy bites of fruit and coconut flakes—make them for yourself or as a fun summer project with your kids!
  • Prep time: 5 minutes
  • Freeze time: Overnight
  • 12 popsicles
  1. In a blender, blend Sweetened Condensed Coconut Milk, full-fat coconut milk, coconut flakes, and dairy-free heavy cream until combined.
  2. Place a few pieces of fruit into each of the popsicle molds and pour the coconut mixture on top.
  3. Place popsicle sticks in each and freeze overnight.
  4. Unmold and enjoy!
