This delightful dip combines two super foods, coconut and avocado. Lots of lemon and cucumber make for a delectable dip!
- 5-10 minutes to assemble
- 2 1/2 cups
- Add avocadoes, cucumber, Coconut Milk, lemon juice, cilantro, shallots, salt and garlic to a blender or food processor. Blend or process until a thick purée with bits of small chunks in it.
- Cover and refrigerate. Use within two days.
