Gingerbread Brownies
  • ½ cup dairy-free butter, melted
  • 2 Tbsp molasses
  • 2 Tbsp brown sugar
  • 1 (11.6oz) can Sweetened Condensed Coconut Milk
  • 1 cup all-purpose flour
  • 1 Tbsp cocoa powder
  • 1½ tsp baking powder
  • 1 Tbsp ground ginger
  • 1 tsp cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp salt
  • Powdered sugar for dusting
Slightly sticky, perfectly chewy, lightly spiced, and really easy to make, this dairy-free treat is perfect for sharing!

  1. Preheat the oven to 350°F and line a 9×9 inch baking dish with parchment paper.
  2. In a mixing bowl, whisk together melted butter, molasses, and brown sugar until well combined.
  3. Whisk in the Sweetened Condensed Coconut Milk until well combined.
  4. Sift the flour, cocoa powder, baking powder, ginger, cinnamon, cloves, and salt into the wet ingredients. Whisk until just combined.
  5. Pour into the prepared pan and bake for 20-30 minutes. Let cool before dusting with powdered sugar. Enjoy!
