These chewy, apple-infused caramels are the perfect seasonal treat! Easy to make, dairy-free, and great for gifting.

Directions
- Simmer 2 qts of apple cider in a large pot for about 1 hour until it's reduced to 1 cup.
- Line a 9x13 inch pan with parchment paper and grease with non-stick spray. Make sure the paper goes up the sides of the pan for easy removal.
- Place reduced cider, Sweetened Condensed Coconut Milk, dairy-free butter, dark brown sugar, corn syrup, and salt in a pot with enough room for caramel to bubble up a good bit.
- Stir constantly over medium heat until caramel reads 245-250°F on a candy thermometer.
- Pour into the prepared pan. Let cool completely to room temperature.
- Remove from the pan, remove parchment paper, and cut into 1 inch squares. Wrap individually with parchment paper and store at room temperature.
