Directions
- Preheat the oven to 350°F. Grease and line a loaf pan with parchment.
- In a large bowl, whisk Sweetened Condensed Coconut Milk, cooled melted butter, vanilla extract, sugar, and eggs until combined.
- Mash bananas into the wet ingredients with a fork.
- In a medium bowl, whisk flour, baking soda, salt, and cinnamon together.
- Sift the dry ingredients into the wet.
- Fold with a spatula until just combined.
- Pour batter into the prepared pan.
- Bake for 45 minutes to 1 hour. This sounds like a big range but all ovens run a bit differently. After 45 minutes, check with a skewer and bake until it comes out clean.
- Let the loaf cool in the pan for 15 minutes, then take it out and place on a wire rack to finish cooling.
