Sweetened Condensed Coconut Milk

Ingredients

  • 1 (11.6 oz) can Sweetened Condensed Coconut Milk
  • ½ cup vegan butter, melted and cooled
  • 1 Tbsp vanilla extract
  • ½ cup sugar
  • 2 large eggs
  • 3 very ripe bananas
  • 1¾ cup all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 teaspoons cinnamon

Yield

  • 12 servings

Directions

  1. Preheat the oven to 350°F. Grease and line a loaf pan with parchment.
  2. In a large bowl, whisk Sweetened Condensed Coconut Milk, cooled melted butter, vanilla extract, sugar, and eggs until combined.
  3. Mash bananas into the wet ingredients with a fork.
  4. In a medium bowl, whisk flour, baking soda, salt, and cinnamon together.
  5. Sift the dry ingredients into the wet.
  6. Fold with a spatula until just combined.
  7. Pour batter into the prepared pan.
  8. Bake for 45 minutes to 1 hour. This sounds like a big range but all ovens run a bit differently. After 45 minutes, check with a skewer and bake until it comes out clean.
  9. Let the loaf cool in the pan for 15 minutes, then take it out and place on a wire rack to finish cooling.
