This easy-to-make cobbler, featuring Sweetened Condensed Coconut Milk, is the perfect vegan treat for a summery day, showcasing yummy hot fruit bubbling beneath golden biscuits.

Directions
- Heat oven to 350°F. Coat a cast iron skillet or 9x9-inch baking dish with non-stick spray.
- Gently toss fruit with Sweetened Condensed Coconut Milk, lemon juice, 2 Tbsp all purpose flour. Pour into the prepared pan and bake for 15 minutes.
- While fruit is baking, prepare the biscuits.
- Stir the 1 cup all purpose flour, baking powder, and sugars with a fork until well combined. Mix in the shortening with a fork or pastry cutter until the shortening is crumbly. Stir in the milk until just combined.
- Place spoonfuls of dough over the hot berries until the surface is evenly covered then bake for 40-45 minutes until biscuits are nice and browned.
- Cool 30 minutes before serving.
