Sweetened Condensed Coconut Milk

Ingredients

  • FILLING
  • 1 (11.6 oz) can Sweetened Condensed Coconut Milk
  • 4 cups berries (raspberries, blackberries, blueberries, strawberries)
  • 2 tsp lemon juice
  • 2 Tbsp all purpose flour
  • BISCUITS
  • 1 cup all purpose flour
  • 2 tsp baking powder
  • ¼ cup sugar
  • 2 Tbsp brown sugar
  • 3 Tbsp shortening
  • ⅓ cup dairy-free milk (e.g., almond, oat, soy, or rice milk)

This easy-to-make cobbler, featuring Sweetened Condensed Coconut Milk, is the perfect vegan treat for a summery day, showcasing yummy hot fruit bubbling beneath golden biscuits.

  • Bake time: 1 hour
  • Cool time: 30 minutes

Directions

  1. Heat oven to 350°F. Coat a cast iron skillet or 9x9-inch baking dish with non-stick spray.
  2. Gently toss fruit with Sweetened Condensed Coconut Milk, lemon juice, 2 Tbsp all purpose flour. Pour into the prepared pan and bake for 15 minutes.
  3. While fruit is baking, prepare the biscuits.
  4. Stir the 1 cup all purpose flour, baking powder, and sugars with a fork until well combined. Mix in the shortening with a fork or pastry cutter until the shortening is crumbly. Stir in the milk until just combined.
  5. Place spoonfuls of dough over the hot berries until the surface is evenly covered then bake for 40-45 minutes until biscuits are nice and browned.
  6. Cool 30 minutes before serving.
