Valentine's Day Brownies
  • ½ cup sugar
  • ¾ cup dairy-free/vegan butter
  • 1 (11.6 oz) can Sweetened Condensed Coconut Milk
  • 1 ⅓ cups chopped unsweetened dark chocolate, divided into 2 parts: 1 cup and ⅓ cup
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup cocoa powder
  • ⅔ cup all purpose flour
  • 1 tsp salt
Fudgy, sweet, and dairy-free! What more could you want in a brownie? This recipe also works beautifully with regular butter.
  • Prep time: 15 minutes
  • Bake time: 45 minutes
  • Cooling time: 1 hour
  • 16 servings
  1. Preheat oven to 350°F. Line an 8x8in pan with parchment and grease.
  2. Melt butter and sugar in a medium saucepan over medium heat. Stir until sugar is dissolved.
  3. Take off heat and stir in Sweetened Condensed Coconut Milk and 1 cup chopped chocolate. Stir until combined and chocolate has melted.
  4. Transfer mixture to a large bowl.
  5. Whisk in eggs one at a time.
  6. Whisk in vanilla.
  7. Sift cocoa powder, all purpose flour, and salt into the bowl. Stir with a spatula until combined. Fold in the remaining ⅓ cup chopped chocolate.
  8. Pour the batter into the prepared pan.
  9. Bake for 45 minutes until a toothpick comes out clean.
  10. Cool on a wire rack for 1 hour.
  11. Remove from the pan, slice and enjoy!
