Rice Pudding

Rice Pudding
  • 1 cup arborio rice
  • 2 cups water
  • 2 cups milk (any dairy or non-dairy variety)
  • 1 vanilla bean
  • Pinch salt
  • 1 (11.6 oz) can Sweetened Condensed Coconut Milk
  • ½ tsp cinnamon
A perfectly sweet and comforting snack. This pudding can be enjoyed hot or cold!

  • 4–5 servings
  1. Put rice, water, milk, and salt into a large pot.
  2. Slice vanilla bean open lengthwise. Scrape seeds and add to pot along with the pod.
  3. Bring to a gentle boil then reduce to low for 15 minutes. Stir occasionally.
  4. Add Sweetened Condensed Coconut Milk and cinnamon. Simmer uncovered for 10–15 minutes.
  5. Let stand covered for 10 more minutes.
  6. Discard vanilla bean pod.
  7. Let cool to room temperature then store in the refrigerator.
