Sweetened Condensed Coconut Milk

Ingredients

  • 1 (11.6 oz) can Sweetened Condensed Coconut Milk
  • 12 oz high-quality semi-sweet chocolate chips
  • 3 Tbsp butter
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 1½ cup chopped walnuts
  • Optional: assorted chocolate melting wafers (dark, milk, and white)

  • 20 minutes to assemble
  • 2 hours to chill

Directions

  1. Line an 8x8-inch baking dish with parchment paper with 1 inch of paper hanging over the edges for easy removal.
  2. Place a pot containing 1 inch of water on the stove and bring to a simmer.
  3. Combine Sweetened Condensed Coconut Milk, chocolate chips, butter, vanilla extract, and salt in a heat-safe bowl and place on top of the pot of simmering water to make a double boiler.
  4. Turn down heat so that no steam is escaping. This ensures that no moisture comes in contact with the chocolate mixture.
  5. Stir the mixture with a spatula until everything is smooth and melted. Take off the heat and stir in the walnuts.
  6. Pour the mixture into the lined baking dish and refrigerate for 2 hours.
  7. Remove fudge from pan and cut into squares. Store in the fridge to keep firm.
  8. For extra oomph, you can coat and drizzle squares in chocolate.
  9. Melt each type of melting wafer in a separate bowl. Using a fork, dip each fudge square in the chocolate and set on a parchment-lined pan to set. Don’t insert the fork into the fudge, just use it to gently handle the square.
  10. Once squares are all dipped, pour remaining melted chocolate into a piping bag. You may need to re-melt the chocolate. Cut a small hole and drizzle contrasting colored chocolate over the squares. Let chocolate set and enjoy!
