Coconut Magic Bars

Ingredients

  • 1 1/2 cups vanilla wafer crumbs (about 45 cookies)
  • 6 tablespoons butter or margarine
  • 1 1/2 cups sweetened flaked coconut, divided
  • 1 see recipe for sweetened condensed coconut milk using Andre Prost Coconut Milk (found in the baking section)
  • 1-12 oz package semi-sweet chocolate chips
  • 2 cups mini marshmallows
  • 1 cup chopped walnuts*
  • *For a sweet and salty treat, substitute salted Spanish nuts for walnuts

These delicious bars have a coconut theme! They’re great for a crowd! ‘Bet you can’t eat just one!”  We made a sweetened condensed coconut milk just for this recipe.

Time

  • 15 minutes to assemble
  • 35 minutes to cook
  • Total time: 50 minutes

Directions

  1. Preheat oven to 350°F. Grease or spray a 9 X 13 inch baking pan.
  2. Melt butter in a medium saucepan. Add cookie crumbs and 1/2 cup of coconut flakes. Mix well and spread into prepared pan. Using the bottom of a measuring cup, press crumb mixture evenly and firmly into bottom of pan. Bake 10 minutes and remove from oven.
  3. Immediately spread sweetened condensed coconut milk over crust. Sprinkle with remaining 1 cup coconut flakes, chocolate chips, marshmallows and walnuts.
  4. Bake 25 minutes or until lightly browned. Cool on wire rack, then refrigerate.
