Coconut Magic Bars

Ingredients

1 1/2 cups vanilla wafer crumbs (about 45 cookies)
6 tablespoons butter or margarine
1 1/2 cups sweetened flaked coconut, divided
1 (11.6 oz) can Sweetened Condensed Coconut Milk
1-12 oz package semi-sweet chocolate chips
2 cups mini marshmallows
1 cup chopped walnuts*
*For a sweet and salty treat, substitute salted Spanish nuts for walnuts

These delicious bars have a coconut theme! They’re great for a crowd! ‘Bet you can’t eat just one!” We made a sweetened condensed coconut milk just for this recipe.

Directions

Preheat oven to 350°F. Grease or spray a 9 X 13 inch baking pan.
Melt butter in a medium saucepan. Add cookie crumbs and 1/2 cup of coconut flakes. Mix well and spread into prepared pan. Using the bottom of a measuring cup, press crumb mixture evenly and firmly into bottom of pan. Bake 10 minutes and remove from oven.
Immediately spread sweetened condensed coconut milk over crust. Sprinkle with remaining 1 cup coconut flakes, chocolate chips, marshmallows and walnuts.
Bake 25 minutes or until lightly browned. Cool on wire rack, then refrigerate.
