Coconut Peanut Basil Marinade

  • 1/2 cup finely chopped fresh basil
  • 1/4 cup brown sugar
  • 1/4 cup fresh squeezed lemon juice
  • 1 grated rind of lemon, no pith
  • 1 tablespoon finely minced fresh ginger
  • 4 large cloves garlic, finely minced
  • Note: This makes enough marinade for 4 lbs of meat.
  • 1-13.5 oz can Andre Prost Coconut Milk
  • 1-3.5 oz box A Taste of Thai Peanut Sauce Mix
Coconut Milk and Peanut Sauce Mix combined with lemon make an outstanding sweet-tart marinade.
  • 20 minutes
  • 2 3/4 cups
  1. In a bowl, whisk Coconut Milk, Peanut Sauce Mix (both inner envelopes) basil, brown sugar, lemon juice, lemon rind, ginger and garlic until well mixed.
  2. Pour over meat, chicken or shrimp, turning to coat on all sides. Marinate at least 2 hours.
  3. Grill or bake.
  4. Boil leftover marinade for 5 minutes and use as a dipping sauce.
