Sweetened Condensed Coconut Milk

Ingredients

  • â…“ cup cornstarch
  • ½ cup cocoa powder
  • ½ tsp salt
  • 1 (11.6 oz) can Sweetened Condensed Coconut Milk
  • 4 cups dairy-free milk (e.g., almond, oat, soy, or rice milk)
  • 6 oz bittersweet chocolate, roughly chopped
  • 1 tsp vanilla extract
  • 10 oreo cookies, crushed in a resealable plastic bag with a rolling pin, or in a food processor
  • Gummy worms

Easy layers of rich chocolate pudding and crunchy cookie crumbs create a delightfully silly, yummy, kid-friendly, vegan treat.

Time

  • Prep time: 5 minutes
  • Cook time: 30 minutes
  • Chill time: 2 hours

Yield

  • 10-12 servings depending on container size

Directions

  1. Have 10-12 small jars or plastic cups at the ready.
  2. In a medium saucepan whisk cornstarch, cocoa powder, and salt together until there are minimal lumps. Whisk in the Sweetened Condensed Coconut milk and the dairy-free milk until well combined.
  3. Stir with a wooden spoon or heat-proof spatula over medium heat until boiling. Continue stirring for 8 minutes until quite thick.
  4. Remove from heat and stir in the chocolate and vanilla until combined and chocolate pieces are melted through.
  5. Stir until cooled slightly, still warm but not hot. You may also beat the pudding on low in a stand mixer until cool.
  6. Pour into individual cups leaving room for oreo and gummy worm topping. Cover with plastic wrap and refrigerate until chilled, at least two hours. Pudding can last in the refrigerator for up to one week.
  7. Once ready to serve, sprinkle with crushed oreos and top with gummy worms.
