Sweetened Condensed Coconut Milk

Ingredients

  • 3 cups rolled oats
  • ½ cup dried cranberries
  • ½ cup dried cherries
  • ⅓ cup chopped pecans, toasted
  • ⅓ cup chopped walnuts, toasted
  • ⅓ cup sliced almonds, toasted
  • 1 cup pumpkin seeds
  • 1 (11.6oz) can Sweetened Condensed Coconut Milk
  • ¼ cup vegan butter, soft
  • ¼ cup neutral oil
  • ½ tsp salt

These nutritious, dairy-free, gluten-free, and vegan bars are packed with nuts and perfect for any time of day.

Time

  • 1 hour to assemble and bake
  • 30 minutes to cool

Yield

  • 10 bars

Directions

  1. Preheat oven to 350°F. Line a 9x13in pan with parchment paper. Make sure parchment hangs over the edge for easy removal.
  2. Combine the oats, cranberries, cherries, pecans, walnuts, almonds, and pumpkin seeds in a large bowl.
  3. In a medium bowl, whisk Sweetened Condensed Coconut Milk, vegan butter, neutral oil, and salt.
  4. Pour the wet ingredients over the dry and mix to combine.
  5. Press the mixture into the pan until even. Bake for 35-45 minutes until golden.
  6. Cool all the way in the pan. Remove onto a cutting board and cut into 10 bars.
  7. Store in an airtight container in the fridge for a week or in the freezer for 2 months. Let thaw before you eat.
