Directions
- Preheat oven to 350°F. Line a 9x13in pan with parchment paper. Make sure parchment hangs over the edge for easy removal.
- Combine the oats, cranberries, cherries, pecans, walnuts, almonds, and pumpkin seeds in a large bowl.
- In a medium bowl, whisk Sweetened Condensed Coconut Milk, vegan butter, neutral oil, and salt.
- Pour the wet ingredients over the dry and mix to combine.
- Press the mixture into the pan until even. Bake for 35-45 minutes until golden.
- Cool all the way in the pan. Remove onto a cutting board and cut into 10 bars.
- Store in an airtight container in the fridge for a week or in the freezer for 2 months. Let thaw before you eat.
