Directions
- Line and grease an 8x4-inch pan with parchment paper and non-stick spray. Preheat the oven to 350°F.
- In a small bowl, whisk together flour, baking powder, and salt.
- In a medium bowl, whisk together eggs and Sweetened Condensed Coconut Milk until well combined.
- Add the dry ingredients to the wet and whisk until just combined. Add the orange juice and orange zest then whisk until just combined. Be careful to not overwork the batter.
- Pour the batter into the prepared loaf pan and bake for 40-50 minutes, until the center of the loaf bounces back when lightly pressed.
- Let the loaf cool completely before removing and glazing.
- While the loaf cools, make the glaze. In a bowl, zest the whole orange then juice it all into the same bowl. Add the confectioners sugar and whisk until well combined.
- Once the loaf is cool, pour the glaze to cover the loaf and garnish with some extra orange zest if you’d like.
