Time
- Prep time: 5 minutes
 - Chill time: 2 hours
 - Bake time: 15 minutes
 - Cool time: 10 minutes

Directions
- Line two sheet pans with parchment paper.
 - Beat Sweetened Condensed Coconut Milk, peanut butter, and vanilla extract until combined.
 - Add in pancake mix and beat until combined.
 - Use a tablespoon to scoop, then form balls with your hands. Place 12 on each sheet pan, spaced 2” apart.
 - Wrap with plastic wrap and place in the fridge for at least 2 hours, up to overnight.
 - Preheat oven to 350°F.
 - Unwrap and use a fork to press a criss cross pattern, cookies will flatten.
 - Bake for 12-15 minutes until lightly brown.
 - Let cool for at least 10 minutes. Enjoy!
