Directions
- Grease a 9” x 13” pan and preheat oven to 350°F.
- Drain the pineapple tidbits, reserving ½ cup of juice.
- Using an electric mixer, beat cake mix, ½ cup water, ½ cup reserved pineapple juice, ½ cup oil, and 3 eggs for 2–3 minutes. Fold in the pineapple tidbits with a spatula.
- Pour the batter into the greased pan. Bake for 25–28 minutes until done.
- Poke a lot of holes all over with a skewer or chopstick. Pour the whole can of Sweetened Condensed Coconut Milk and spread across cake with a spatula.
- Once the cake is cooled, top with dairy-free whipped cream and garnish with maraschino cherries.
