Sweetened Condensed Coconut Milk

Ingredients

  • 1 (20 oz) can pineapple tidbits in juice
  • 1 box yellow cake mix
  • ½ cup water
  • ½ cup oil
  • 3 eggs
  • 1 (11.6 oz) can Sweetened Condensed Coconut Milk
  • Dairy-free whipping cream for topping
  • Maraschino cherries for garnish

Dairy-free, fruity, moist, and fun! This simple recipe is a real crowd-pleaser.

Directions

  1. Grease a 9” x 13” pan and preheat oven to 350°F.
  2. Drain the pineapple tidbits, reserving ½ cup of juice.
  3. Using an electric mixer, beat cake mix, ½ cup water, ½ cup reserved pineapple juice, ½ cup oil, and 3 eggs for 2–3 minutes. Fold in the pineapple tidbits with a spatula.
  4. Pour the batter into the greased pan. Bake for 25–28 minutes until done.
  5. Poke a lot of holes all over with a skewer or chopstick. Pour the whole can of Sweetened Condensed Coconut Milk and spread across cake with a spatula.
  6. Once the cake is cooled, top with dairy-free whipped cream and garnish with maraschino cherries.
