Directions
- In a large skillet, heat oil over medium heat.
- Add Yellow Curry Paste and stir until dissolved.
- Add fish fillets, cooking for 1-2 minutes on each side.
- Stir in chicken broth and Fish Sauce. Boil for 2 minutes.
- Add tomatoes and mushrooms. Simmer on medium heat until vegetables are cooked, about 5 minutes.
- Add basil or cilantro and serve with a side of fragrant Jasmine Rice.
