Yellow Curried Fish

Ingredients

  • 2 tablespoons oil
  • 1 tablespoon and 1 teaspoon Yellow Curry Paste
  • 1 1/2 lbs fish fillets
  • 3/4 cup Andre Prost Coconut Milk
  • 2 teaspoons Fish Sauce
  • 2 medium tomatoes, cut into wedges
  • 1-8oz package sliced mushrooms
  • 2 teaspoons chopped fresh basil or cilantro
  • Jasmine Rice, cooked

The sweet and savory flavors of Yellow Curry Paste work well with any fish.

Time

  • 5 minutes to assemble
  • 10 minutes to cook
  • Total time: 15 minutes

Yield

  • 4 Servings

Directions

  1. In a large skillet, heat oil over medium heat.
  2. Add Yellow Curry Paste and stir until dissolved. 
  3. Add fish fillets, cooking for 1-2 minutes on each side.
  4. Stir in chicken broth and Fish Sauce. Boil for 2 minutes. 
  5. Add tomatoes and mushrooms. Simmer on medium heat until vegetables are cooked, about 5 minutes. 
  6. Add basil or cilantro and serve with a side of fragrant Jasmine Rice.
